Pauli and I love to cook together, but when it comes to grilling, that’s when I usually take charge. After all, it’s one of my favorite ways to cook food, especially in the summer and fall!
Well, this weekend was an exciting one…we hosted a grilling competition from the Fox Plaza in New York City! It was a blast! Rachel, Will, and Pete were total rockstars and made some incredible, mouthwatering, insta-worthy food! The lollipop lamb (made by Rachel), coffee rubbed baby back ribs (made by Will), and ribeye (made by Pete) were delicious and it was SO HARD to choose a winner! Don’t worry—we’ll share these recipes with you below so that you can try them on your new grill too!

28” Pellet Freestanding Grill by Coyote Outdoor Living
The 28” Pellet Freestanding Grill functions like a luxury indoor appliance—outside! You can grill, smoke, sear, and bake. The state-of-the-art digital touch screen, three food temperature probes as well as a range of even heat settings, allows you to utilize this high-end outdoor grill in a similar fashion to an indoor oven. The Smart Drop™ front-loading pellet system its environmentally friendly—using approximately 1 lb. of pellets per hour.

Smithfield offers good food…done right! Their products are perfect for summertime grilling, are packed with tons of flavor, and are super convenient! Their fresh marinated pork cuts are some of my favorites to grill with because they’re conveniently pre-seasoned and available in an assortment of delicious cuts and flavors, so I can easily pop a few of these on the grill when our friends and family come over throughout the summer. In addition to grilling up the Fresh Pork Tenderloin right out of the package, I’ve also used the Original Recipe Loin Filet to create these Honey Pork Tenderloin Kabobs. The delicious pork alongside the grilled fresh peaches (my personal favorite) are the perfect combination and one that all ages will love! Tips for grilling pork: Don’t overcook it! Use a meat thermometer and heat until the thickest part of the loin has an internal temperature of 145 degrees. Then, take it off the grill and loosely cover it with foil. Let it rest for 10 minutes (the meat will finish cooking with the residual heat) and the juices will redistribute. Voilá! A perfectly cooked meal!
